Deviled Egg Scramble

Deviled Egg Scramble
Servings: 2

Ingredients
1 tablespoon butter or margarine
½ cup sweet yellow onion, diced
½ cup roasted red peppers, chopped
1 tablespoon capers
5 eggs, beaten
1 tablespoon Dijon mustard
1 tablespoon prepared horseradish
1 teaspoon fresh chives, chopped

Directions

1-Heat the butter or margarine in a skillet over medium heat.

2-Once melted, add the sweet yellow onion and sauté for 2 minutes.

3-Add the roasted red peppers and the capers.

4-Cook, stirring frequently, for an additional 2-3 minutes, or until the onions are softened and beginning to caramelize.

5- To the beaten eggs, add the Dijon mustard and the prepared horseradish.

6- Whisk together until well blended.

7-Spread the onion and pepper mixture out over the surface of the skillet.

8-Pour the egg mixture into the skillet.

9- Continue cooking, scrambling the eggs until they are cooked to your desired doneness.

9-Transfer the eggs to serving plates and garnish with chives before serving.
