White Garlic Portabella Pizzas

Ingredients

8 large portabella mushroom caps
2 tablespoons olive oil
5 cloves garlic
1 cup crème fraiche
½ cup Parmesan cheese
½ teaspoon salt
1 teaspoon coarse ground black pepper
1 cup artichoke hearts (canned or frozen), chopped
½ cup fresh basil, chopped
1 cup goat cheese

Directions

1- Begin by preheating the broiler. Heat a large skillet over medium heat.

2-Brush the mushroom caps with olive oil on both sides and place them in the preheated skillet.

3- Cook for approximately 3 minutes per side, or until tender but firm.

4-Remove the mushroom caps from the skillet and set them aside.

5-Add the remaining olive oil to the skillet, along with the garlic.

6-Cook the garlic, stirring frequently, for 2 minutes.

7- Add the crème fraiche, Parmesan cheese, salt, and coarse ground black pepper.

8-Mix well and cook over medium heat for 2-3 minutes.

9-Spoon the white garlic sauce into the gill side of each of the mushroom caps.

10-Top each with the artichoke hearts, basil, and goat cheese.

11-Place the portabella pizzas under the broiler for 3-5 minutes, or until the tops are golden brown. Serve immediately.
